Harvest: 10th-15th /08 – Handpicked – Harvest at dawn
Vinification: Grapes are chilled at 7-8°C in cold storage followed by pressing whole bunch using a pneumatic press, separating the heart of juice to be vinified as a classic white wine. Fermentation at controlled temperature of 16-18ºC. After the first fermentation, a mixture of “liqueur de triage”, yeast, sugar and nutrients is added, the wine is bottled and a second fermentation in bottles is performed. Aging on the lees for 24 months, riddling to gather the lees in the neck of the bottle, disgorging, removing sediment, dosing and finally corking.

Tasting notes: Bright yellow color with fine crystalline bubbles. Aromas and flavors of stone fruits, pineapple, honey and brioche. Exploding acidity with creamy f finishing and gentle sweetness
