A story of passion, Sept Winery was born from the desire to breathe new life into a family’s land and cultivate it with a life-changing passion that has matured over the years. When fortune revealed itself in the taste of wine, Maher knew his true calling awaited him, deeply rooted in his father's land. A change of heart and path brought him back to his village in the mountains of Lebanon, where he realized his vision of starting a biodynamic vineyard. Today, this vineyard is dedicated to producing wine that expresses the extraordinary nature of the Lebanese terroir by celebrating the richness and authenticity of its Mediterranean soil.

A biodynamic approach that trusts in nature, Maher strictly adheres to the principles of biodynamic and natural farming, never intervening with the organic growth of his grapes or the vinification process. For him, nature is a perfect example of a successful, sustainable model based on the balance between the elements that define every environment: earth, air, fire, and water. Maher’s intervention in the land as a winemaker is never corrective; it aims only to respect and maintain the natural balance in his vineyard through a glorious combination of sun, earth, air, and water. His soil is completely free of chemicals and is worked according to the lunar calendar to ensure the yield of perfect fruit.

A "Vin de Lieu." By producing wines that express the rich diversity and exceptional character of the Lebanese soil, "Sept" proudly refers to itself as a "vin de lieu." A wine that offers the authentic taste of Lebanon, using native yeast and free from any additives. With a fervent mission to reconnect with nature and celebrate Lebanese grapes and soil, Sept aims to become an ambassador of Lebanese heritage and an inspiring model of biodynamic farming in the region and the world.

Terroir Nehla – A Biodynamic Approach

Un “Vin de Lieu”, An Expression of Terroir

Completely free of chemicals, Maher’s soil in Nehla, Batroun, located at 950 meters above sea level with a view of the Mediterranean Sea, is worked according to the lunar calendar and biodynamic principles to ensure the yield of high-quality fruit, with 500 bottles of biodynamic Syrah and Cabernet Sauvignon produced.

“Un Vin de Lieu” is a slogan and motto that Sept carries on each of its bottles. By producing wines that reflect the honest expression of their own terroir, Sept Winery demonstrates the highly diverse microclimates of Lebanon and the exceptional character they can generate in a bottle.

To further support the authentic expression of these terroirs by showcasing their soil, climate, and fruit as effectively as possible, our fermentation process is based on:
– Wild yeast/spontaneous fermentation
– Natural stabilization and minimal filtration of the wine
– No additives during the fermentation process
– Only a small amount of sulfites added before bottling (less than 35 mg/l total SO2)
– No use of oak barrels (stainless steel tanks)
– Lees aging

This natural fermentation helps us to fully express the authentic flavors and aromas that a terroir can offer, while creating a unique identity for Lebanese wines. After all, what is wine if not the expression of a land?
